...Stasera avevo voglia di qualcosa di diverso ed ecco che ho unito la mia fantasia a degli ingredienti e voilà.....
RICETTINA
un rotolo di pasta sfoglia rotondo già pronto
2 scatolette di tonno sgocciolato
olive bianche secondo i gusti
100ml latte
1 uovo
3 cucchiai di parmigiano grattugiato
sale-pepe -un filo di olio extra vergine
Stendere la pasta sfoglia nella teglia e bucherellare il fondo con i rebbi di una forchetta.In una ciotola sbattere l'uovo con il latte e il parmigiano,salare e pepare.Tagliare a pezzetti le olive e unirle al tonno precedentemente schiacciato con la forchetta.Accendere il forno a 180gradi.Versare il tonno e le olive sulla sfoglia,stenderlo bene e versare su questo il composto di uovo e latte....aggiungere un filo di olio (se si tratta di tonno in olio d'oliva evitare di aggiungere altro olio)e infornare per 30 min....BUON APPETITO!!

Cup-Cakes al Pistacchio
Ricettina per 8 cup-cakes
80 g farina00
10 g farina di pistacchio
90 g burro
90 g zucchero semolato
un cucchiaino di lievito
latte q. b. (circa due cucchiai)
1 uovo
Mescolare il burro con lo zucchero, aggiungere l’uovo e un cucchiaio di farina00 miscelata col lievito e la farina di pistacchio… mescolare dal basso verso l’alto e aggiungere il resto della farina e il latte. Rolled Sugar Cookies with Pistacchio butter cream
Croccanti e gustosi biscotti che ho scopiazzato dal blog americano "Glorius Treat".....ottimi!!!...Vi lascio la ricetta che è in "CUP"...(io ho coprato gli appositi misurini,ma sul web è possibile trovare la tabella di conversione dei CUPS in GRAMMI)
3 cups all-purpose flour
1 teaspoon baking powder
1 cup (2 sticks) unsalted butter, room temperature
1 cup sugar
1 large egg
1 teaspoon good quality vanilla extract
Parchment paper Directions:

-In a medium bowl, stir together the flour and baking powder and set aside.
-In the bowl of an electric mixer, using the paddle attachment, cream together the butter and sugar until light and fluffy. This should take about 3 minutes.
-Add the egg and vanilla and beat another minute or so.
-Add the flour mixture slowly. (Be careful not to add too much at a time or you will have a snowstorm of flour.)
-Blend until all of the flour is incorporated and the dough begins to pull away from the sides of the bowl.
-Take the dough out of the bowl and place it on a piece of parchment paper.
-Using your hands, knead the dough a few times.
-Place the dough in a large plastic (ziplock type) bag and refrigerate for about 2 hours. If you want to speed up the chilling process, place the bag of dough in the freezer for about 20-30 minutes. Just don't forget it in the freezer, or it will become to firm to work with (and then you'll have to wait for it to thaw).
-When it's almost time to remove the dough from the refrigerator (or freezer), preheat oven to 350 degrees (F).
-When the dough has chilled and is firm, take out about half of the dough, leaving the rest in the refrigerator (until your ready to work with it). Cut the dough with your choice of cookie cutters. Place cookie shapes on a prepared baking sheetPlace entire baking sheet (with cookies on it) in the freezer or refrigerator for about 3-5 minutes. Chilling the cookies this way will help ensure they keep their shape while baking.
Bake cookies for 8-10 minutes depending on the size of the cookie. Bake until they are just barely beginning to take on a golden tone. They will continue to bake as long as then are on the pan, so don't let then get too brown. Cool for just a minute or so on the pan, then carefully remove cookies from the baking sheet and place on a cooling rack.Once cooled, the cookies can be decorated with frosting, royal icing or rolled fondant.

Per dare un tocco personale ho preparato una crema al burro aggiungendo della farina di pistacchio e ho unito 2 biscotti !

Crostata con Marmellata di Castagne
...Dopo un pomeriggio intero, speso a pelare castagne,è venuta fuori una marmellatina finissima!!!....
...il giorno successivo ho deciso di utilizzare la marmellata preparando questa crostata......
per la marmellata: 2kg castagne-2kg zucchero- 2 bicchieri d'acqua -qualche goccia di rum-semi di vaniglia
Mettere le castagne con tutta la buccia in un pentolone con un pò d'acqua e far cuocere per 15-20min.per rendere piu' semplice l'operazione dello "sbucciamento"...sbucciare e pelare le castagne e passatele al setaccio con l'apposito "aggeggio"d'acciaio...versare la crema in una pentola,lo zucchero e 2 bicchieri d'acqua ,far cuocere fin quando si sarà addensata....a metà cottura aggiungere la vaniglia e alla fine il rum!!!!..versare in barattoli precedentemente sterilizzati.

Torta al Pistacchio
....è arrivato l'autunno,le piogge e l'umidità e..
...non c'è meglio di una fetta di torta da gustare in compagnia e con una buona tazza di tè!,....il colorito verde è dovuto al fatto che ho mescolato nell'impasto della granella e della crema di pistacchio!!

Vanilla Cake
Recipe by Glorious Treats
1 1/4 cups cake flour
1 1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs
3/4 cup sugar
1 1/2 teaspoons pure vanilla extract
1/2 cup oil (vegetable, canola or extra light olive oil)
1/2 cup buttermilk
(or 1/2 cup milk plus 1/2 teaspoon white vinegar or lemon juice- add acid to the milk then set aside for 5 minutes before using)
Directions-
* Preheat oven to 350*F.
* In a medium bowl, add cake flour, baking powder, baking soda and salt. Stir together with whisk, and set aside.
* In the bowl of an electric mixer, add eggs and beat 10-20 seconds. Add sugar and continue to beat on medium speed about 30 seconds. Add vanilla and oil, beat.
* Reduce mixer speed to low and slowly add about half of the flour mixture. Add half of the milk, then the rest of the flour and the rest of the milk. Beat until just combined. Scrap down the side of the bowl.
* The batter will be thin. Pour batter into a muffin pan prepared with paper liners. Fill liners about 2/3 full.
* Bake cupcakes in pre-heated oven for 12-14 minutes.
* Cool in pan 1-2 minutes, then remove cupcakes from pan (carefully) and finish cooling on a wire rack.
* Frost as desired when fully cool.
The recipe above will work for a 6" cake. Double the recipe for an 8" or 9" cake.
American Buttercream Frosting
1 cup (2 sticks) butter (salted, or unsalted)
1/4 teaspoon salt (if using unsalted butter)
4 cups powdered sugar
1 teaspoon vanilla extract (best quality available)
2-3 tablespoons heavy cream, half and half or milk.
Flavoring options- An almost unlimited number of flavoring options can be added in addition to, or instead of the vanilla. Orange and/or lemon zest, citrus extracts, mint extract, coconut extract or the seeds of a vanilla bean are all wonderful options. In most cases I'll still add 1/2 teaspoon of vanilla, then 1/2 teaspoon of the other flavoring. For zest, add about 1 teaspoon fresh zest. For chocolate buttercream, add 1/2 cup (good quality) unsweetened cocoa powder.
Directions-
* In the bowl of an electric mixer, fitted with the whisk attachment, beat butter (on medium speed) until completely smooth (30 seconds to a minute). (If you are adding cream cheese, add it now, then beat until smooth)
* Add salt (if needed).
* One cup at time, add 2 cups of powdered sugar, beating after each addition.
* Add vanilla, or other flavorings and beat to combine.
* Add about 1 tablespoon of cream, and continue beating.
* Add the remaining 2 cups powdered sugar, one at a time.
* Add an additional 1-2 tablespoons cream until desired consistency is reached. If you want to pipe the frosting on cupcakes, the frosting should be nice and thick. Continue to beat another minute or so. The frosting should now be smooth and fluffy.
